Open Question: Suggestions for dishes with dairy products?

Hiya, I have a catering exam coming up soon and I need to pick 4 dairy dishes to make in 3 hours, and I have no idea what to make! It needs to have lots of different ways of cooking (such as baking, grilling, frying and so on) and it also needs to show a lot of my skills (such as vegetable preparation, meat preparation and so on) So in another words it needs to be a dish that includes LOTS of dairy, needs to be made under 3 hours and is hard!;) Even a single recipe suggestions will be really appreciated!
